The build a light saber is a pretty cool experience. It's hard to answer if it's worth it to you or not. It is $200. I like the legacy light sabers more personally. There isn't a show attached to them but it is kind of cool getting an authentic clone of the movie ones. The Build a light saber ones don't look anywhere near as good. I would recommend the legacy light sabers.

Worth it for me and i have a Savis one and legacy sabers. Building your own saber is such a cool experience.

Two of my teens want to do it I'm trying to justify the money. And I see you need a reservation that I need to do now apparently since I'm at 59 days now

Savi's reservations did not use to be that hard to get, because I don't think a lot of people are willing to pay $200 for the experience. It might be harder now due to COVID restrictions though. You can always cancel 24 hours in advance, so if you change your mind just be sure to cancel at least 1 day in advance.
You can have 1 other person attend the saber building with you, so if only 1 wants to build the saber, the other can watch.
I did it one time, and it is really cool -- the experience itself. Plus you get a customized light saber, a 34" blade (only available by building a saber at Savi's), and a bag to hold the saber in. If you compare that to buying a pre-made Legacy Light Saber, the price is about the same if you factor in having to buy a blade too.
I thought it was worth doing one time, but not sure I'd spend the money to do it again - maybe if they added new customizations or types of light sabers
With that said, the legacy sabers are really cool too - and they weigh less since they're not modular like the Savi's sabers. Weight becomes a factor if you're carrying it around all day
If your kids are diehard Star Wars fans then I do think it is worth it. You can watch videos on YouTube of Savi's workshop. I'm not sure ResortTV1 has ever done a Savi's Workshop video.
