MK: PeopleMover (when it's actually moving )
Epcot: Living with the Land (Spaceship Earth a close second here; lines usually die down and make it a walk-on in the afternoon)
Hollywood Studios: Star Tours usually isn't too bad wait-wise
Animal Kingdom: No reliable little/no wait ride here, but I love the various animal trails (Gorilla Falls and Maharaja Jungle Trek, plus the smaller trails around the base of the Tree of Life)
Epcot: Living with the Land (Spaceship Earth a close second here; lines usually die down and make it a walk-on in the afternoon)

The Liberty Belle Riverboat. Not sure if it counts but it's one of my favorites at MK and you usually don't have to wait too long for it
