I had the unfortunate pleasure of being.... defecated on... by a bird on my way into Magic Kingdom. Theme park ducks. We were in the queue for the Jungle Cruise and there were a couple of ducks walking around the queue. My kids were younger and they got a kick out of it. We might have a photo or video of it somewhere.

Had just gotten some school bread from the Norway pavillion, went around to the outdoor seating area and found this little guy just chillin'.

Well, I always sing to the tigers on the Maharajah Trek at Animal Kingdom. The song of choice? "Hunting Tigers" (Out in Indiyah)" by the Bonzo Dog Doh-Dah Band (yes, that really was their name). trust me, the hunters come off second best in the song, which goes in part, "They bite...they scratch...they make an awful fuss...it's no use stroking them and going '**** **** ****'..." (Okay...I didn't think that a diminutive for "kitty" would be censored...)

One area to be careful in are the pavilions where the outdoor dining tables associated with the Flame Tree BBQ are located in Animal Kingdom. The birds that walk around the tables hoping for someone to be careless or not follow what the signage says have the bad habit of actually flying across your table and aggressively trying to strip food off your plate.
It happened to us personally and we saw it again a few weeks ago when we were there. They look cute/harmless...but...

I've come to suspect the birds at WDW are specially trained attack birds. Those birds at Flame Tree know no fear, and as for the seagulls...on one of my visits to EPCOT World Showcase, I was walking along the promenade, there was someone in front of me eating some popcorn...and a seagull swooped down and snatched some out of the fellow's hand while on the wing...

I was at Flame Tree for lunch one trip, and I had a rather interesting encounter with a duck there.
I had received my food, headed down to one of those dining areas near the water, sat down & was just beginning to enjoy my meal. There was a young family - mom, dad, and 2 kids about 4 & 6 sitting across from me enjoying their lunch also. As I was munching away, a rather bold duck waddled up to me looking for a handout. I ignored him, as you're not supposed to feed the animals, but he was insistent, pecking at my pants leg trying to get me to relent. All this was playing out right in front of the family across from me, and they were quite amused.
As the duck continued to harass me, a remarkable (at least for me) moment of inspiration occurred in my brain, and I stopped eating, turned to the duck, and with a very authoritative voice told him "Mr. Duck, you are a duck & need to eat duck food. I don't have anything for you today, sorry." The duck locked eyes with me, shook his little duck head, turned around & walked away just like he understood exactly what I said to him! I was amazed.
The two young kids were open-mouthed in awe as it appeared to them that the duck understood what I was saying to him, and the parents were hysterical with laughter at the whole situation. The oldest kid, a girl, asked me "How did you do that?", and I matter-of-factly told her that I was a cousin of Dr. Doolittle, and did this all the time. The two kids gave me a look that Walt must have got all the time from kids - I think they thought I was magical! The parents completely lost it though. I thought they might choke on their food they were laughing so hard! Once they had recovered, both parents thanked me for that special moment & said it made their day. I felt great the rest of the day, and still get the warm fuzzies every time I think about it. Of all my Disney memories, this is one of the best.
Oh, and I got pooped on by a seagull once as well...

No crazy bird experiences, as far as I recall, but when I was really young we drove to Florida and didn't get to our hotel until very late at night. As my parents we getting the luggage out of our car, I saw a couple deer walking not too far away, and I excitedly pointed them out to my mother. When she turned around, though, they stopped moving, and she tried to correct me, insisting that they were statues. This happened a couple more times, with me pointing to them when they moved and her turning around when they froze, until a nearby cast member overheard our conversation and confirmed that yes, the deer were real (and apparently common during that time of the evening) and at that moment we all saw them leaping away, as if on cue.

at Disneyland around the Rivers of America, there's never a lack of mallard ducks, but my parents and i always loved checking out what we called "aggressor ducks", lol - which are actually American Coots (not actually a duck but more closely related to cranes and rails)
one or two of them could always be relied on to peck a mallard outta nowhere & for no apparent reason on the water in front of the Pirates queue or Mark Twain dock so we just nicknamed them "aggressor ducks"

I love when you're at the Kilimanjaro Safari and you see random Disney ducks swimming with the Flamingos/Hippos LOL.
