Those who have eaten at Pecos Bills what's your take?
Mexican is the whole family's favorite so I'm leaning towards this one for one day of our trip.

I was there last week and while it does offer a ton of seating and space, there are a few normal perks missing. Like the toppings bar. I don't think that was fully up and running. But, for a quick bite to eat with normal tex-mex taste it is not a bad option.

If Mexican is your favorite, I'd say you'll probably be slightly disappointed. As previously mentioned, it more Tex-Mex and there aren't a lot of menu options. Don't get me wrong ...we do enjoy it but you've had MUCH better Mexican at home for sure!

I wouldn't count on Pecos for what I think you are wanting. Epcot has a few options that have been hit or miss for my family in terms of being decent. Out in Disney Springs there is one or two options but I've not had those.

It's not TX Mexican food if that's what you're hoping for. Think more along the lines of loaded nachos or fajita tacos that you'd get at a sporting event or concert. It looks good, it is good but you just paid for "stadium" food. That said, on our last 2 trips we did eat there and we'd go back again. It is something different from chicken strips, hot dogs, hamburgers. The mobile ordering is easy, and there is a nice large bathroom inside also.

Texas Mexican haha I’ve yet to find good Mexican here in my area of Texas I’m originally from Cali where you can get some good Mexican. The previous posters were pretty much correct. Pecos Bill's is just fine, but it's not really "mexican food'. More like mexican inspired. Save the craving for Epcot, where the Mexico pavillion offers far better mexican food than any place at MK. Some of the non-park restaurants have some really good mexican dishes, and Disney Springs is a good choice for that.

I actually enjoyed my meal there. There is alot of seating as well.
