Looks like a good plan! You want MK last for sure and HS so you can get rise of resistance. Don’t forget Disney springs a couple times

The park hours are floating but I would expect MK and HS to be from 8am to 7pm. AK from 8am to 5pm. And Epcot from 11am(world show case won't open until noon) to 8pm.

As a result I usually don't use an initial pass on Epcot since I can hop to it after 2pm and it's not really even open until noon. However you have both HS and MK covered with 2 days each so you can afford to use one on Epcot and Saturday is the day to do it. Lotus Blossom cafe only opens on weekends and it's one of the best quick serve locations in the parks. I would be prepared to hop to Epcot for the 2nd half of each day since there is so much to do, Epcot is open later and the ride wait times actually go down there after 3pm.

I didn't buy hopper passes just because they are not good until after 2pm and not knowing if a park would be full I could not justify the price. BUt that would be a great idea for Epcot wish you could just add a hopper to one or two days of your visit that would be awesome

What are you doing for dinning? Back in Ocotober-dinning seemed so limited and I wish they had more options.

Call Disney and see how much adding another Park day would add. It won't be much at all. Once you get over 5 days, the price starts dropping quickly. I bet you can snag that extra day for very little. By adding another day, it drops the price of every other day, so it may only cost you 10-20 more a person.
